Well hey there! If you're looking for some easy, delicious breakfast recipes to fix for your family, then you've come to the right place! We've got everything from muffins, to omelets, to french toast. If you've never tried these yummy fixings before, you need to get right on it!
CRAN-APPLE MUFFINS
This recipe takes about 20 minutes of prep time and 20 minutes to bake. It makes a batch of 1 dozen muffins.
Ingredients:
- 1/2 cup whole-berry cranberry sauce
- 1/2 tsp. grated orange zest
- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 1 tsp. ground cinnamon
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1 large egg
- 1/3 cup 2% milk
- 1/3 cup canola oil
- 1 cup shredded peeled tart apple
- 1/2 cup confectioners' sugar
- 1 tbsp. orange juice
Instructions:
- In a bowl, combine the cranberry sauce and orange zest; set aside.
- In a large bowl, combine the flour, sugar, cinnamon, baking soda, baking powder, and salt. Beat the egg, milk, and oil; stir into dry ingredients just until moistened. Fold in the apple.
- Fill greased or paper-lined muffin cups half full. Make a well in the center of each muffin; fill with about 2 tsp. of reserved cranberry mixture.
- Bake at 375 degrees until a toothpick inserted in a muffin comes out clean, 18-20 minutes. Cool for 5 minutes before removing from pan to a wire rack. Combine confectioners' sugar and orange juice; drizzle glaze over warm muffins.
NO-TURN OMELET
This recipe takes about 10 minutes of prep time and 45 minutes to bake and cool off. It will make a total of 10 servings
Ingredients:
- 8 large eggs, lightly beaten
- 2 cups of cooked crumbled sausage or cubbed full cooked ham
- 2 cups of cubed Velveeta
- 2 cups of milk
- 1 cup of crushed saltines (about 24 crackers)
- 1/4 cup chopped onion
- 1/4 cup chopped green pepper
- 1/4 cup chopped sweet red pepper
- 1/2-1 tsp. of salt
Instructions:
- Combine all ingredients. Pour into a greased, shallow 3-qt. baking dish.
- Bake (uncovered) at 350 degrees until a knife that is inserted in the center comes out clean, for 45 minutes. Let the omelet stand for about 5 minutes before serving.
MIXED BERRY FRENCH TOAST BAKE
This recipe takes about 20 minutes + chilling time to prep and about 45 minutes of baking time. It will make a total of 8 servings.
Ingredients:
- 6 large eggs
- 1 3/4 cups fat-free milk
- 1 tsp. sugar
- 1 tsp. ground cinnamon
- 1 tsp. vanilla extract
- 1/4 tsp. salt
- 1 loaf (1 lb.) French bread, cubed
- 1 pkg. (12 oz.) frozen, unsweetened mixed berries
- 2 tbsp. cold butter
- 1/3 cup packed brown sugar
Instructions:
- Whisk together the first six ingredients. Place bread cubes in a 13x9-in. or 3-qt. baking dish coated with cooking spray. Pour egg mixture over top. Refrigerate, covered, for 8 hours or overnight.
- Preheat oven to 350 degrees. Remove berries from the freezer and French toast from the refrigerator; let stand while oven heats. Bake, covered, for 30 minutes.
- In a small bowl, cut butter into brown sugar until crumbly. Top French toast with berries and sprinkle with the brown sugar mixture. Bake, uncovered, until a knife inserted in the center comes out clean, for 15-20 minutes.
